Shrimp Scampi

How to make

Rinse and dry shrimp. Place 3/4 cup all-purpose flour into a bowl, add salt and pepper into flour, set aside. In a large fry pan heat olive oil. Lightly coat each shrimp in flour, shaking off excess and place in fry pan, but do not overcrowd. Cook shrimp till lightly browned on each side. Repeat with remaining shrimp and remove to a plate. Add 1 tablespoon of butter to pan and add garlic. Sauté garlic just until fragrant, do not burn. Add white wine and cook for 1 minute, add lemon zest, juice, and butter 1 tablespoon at a time, letting each addition completely melt. Add parsley and shrimp back to pan. Cook an additional 2 minutes and serve over spaghetti or rice.

Ingredients

  • 3/4 cup all-purpose flour

  • 1 pound large or jumbo shrimp, peeled and deveined with tails intact

  • 3 tablespoons flat leaf parsley, chopped

  • 6 garlic cloves, sliced thin

  • zest and juice of 1 lemon

  • 1/2 cup good white wine

  • 1 tablespoon olive oil

  • 1/2 stick unsalted butter

  • salt and pepper to taste
