Tomato Tart

How to make

Preheat oven to 375 degrees. Place puff pastry on baking sheet lined with parchment paper and roll out a 12x12 square. Prick the puff pastry in the middle with a fork, leaving the 1/2 inch edge without fork holes. Place the thin slices of heirloom tomatoes down first, making sure to cover the entire inner square. Salt and pepper tomatoes. Add cherry tomatoes, oregano, thyme, feta cheese and goat cheese and lightly sprinkle olive oil around the tart. Bake in oven for 25 to 30 minutes or until edges of puff pastry are evenly browned and tomatoes are bubbling. Remove from oven and let cool. Slice into even pieces and serve.

Ingredients

  • 6 heirloom tomatoes, preferrably a variety of colors, sliced thin

  • 1/2 cup of cherry tomatoes in a variety of colors, some sliced in half, some left whole to burst 

  • 1 sheet frozen puff pastry, thawed according to package directions

  • 4 oz feta cheese, crumbled

  • 4 oz goat cheese, crumbled

  • 1 teaspoon fresh oregano

  • 1/2 teaspoon fresh thyme

  • 1 teaspoon olive oil

  • salt and pepper to taste
